Pineapple Mozzarella Roll Up
This pineapple mozzarella roll up is a great high protein vegetarian snack. It’s also super quick and easy to make. You could even make it vegan by substituting mozzarella with almond mozzarella style shreds for example (this may affect nutrition facts for the recipe).
- 1 Soft flour tortilla
- 50g Fat free mozzarella
- 80g Pineapple
- 1/2 Cup baby spinach
- Sea salt, black pepper & chili flakes to taste
- Heat skillet and fry pineapple until lightly brown, set aside. Season with chili flakes if you like sweet & spicy.
- Place tortilla into skillet, spread mozzarella on top and place pineapple in a line down the center of the tortilla.
- Wait for cheese to melt then add baby spinach, season to taste and roll it up.
Tip: If you prefer baby spinach cooked, try frying it with the pineapple chunks in step 1.
